Delicious Date Granola Bars
Here is a great recipe for healthy and yummy granola bars that incorporate dates! Another client shared this with us and she loved them (Elaine had one too and really loved it!).

It’s a super easy way to incorporate dates in the weeks before labor and also a healthier alternative to recipes I found for lactation cookies. The recipe is very forgiving - you can mix in all kinds of seeds, nuts, etc. Pumpkin seeds are also really yummy in it!
Finely chop dates (I use the food processor to get a nice sticky mound) Mix all dry ingredients - try to break up the dates so they are evenly incorporated. Stir sweetener and nut butter over medium heat until it reaches a smooth consistency. Stir into dry mix. Line a 9x11 baking dish with parchment paper and press mix firmly and evenly to bottom of pan. Bake at about 300 F for about 25 minutes.
Every time I make this the baking time seems a little different. I like it a little crispy on the outside but still chewy. Just watch it and be careful not to to go long even if they still seem soft. They will harden as they cool. Let cool completely before slicing into bars. Makes about 16 servings.

- 0.25 cup Flaked Unsweetened Coconut
- 0.50 cup Dried Cherries Unsweetened
- 0.25 cup Wheat germ
- 1 cup Cashews (or any nut) coarsely chopped
